So I finally got around to doing it. After the move from UW-imap to dovecot, I noticed that dovecot supported server-side sieve filtering for email. Rather than writing filtering scripts for each email client that hits the imap server (squirrelmail, Mail.app, Mulberry, etc) to move the email caught by spamassassin, I installed the dovecot sieve and managesieve via FreeBSD's ports system and configured them as per the wiki instructions.
